“Yan Hagel” Cookies: Hazel Hine

(an old Dutch recipe)

1 cup butter
1 cup sugar
2 cups flour
1 egg (separated)
1/2 teaspoon cinnamon
chopped nuts

  1. Let butter stand until soft, then cream with sugar.
  2. Add egg yolks and mix.
  3. Sift flour with cinnamon and add a little at a time.
  4. Work it out with your fingers if you like.
  5. Pat down thin on cookie sheet and brush with egg white to which has been added a little water.
  6. Sprinkle with chopped nuts
  7. Bake 1/2 hr inn 300 oven.
